Are you a fan of marshmallows?
Honestly, they are not my go-to dessert but I love how white and pillowy they look.
My favorite way to eat marshmallows is usually while they’re melting in a hot chocolate bomb or in smores.
However, this combo may be one of my new favorite ways of eating them.
P.S. did you know there’s such a thing as campfire marshmallows? I’m talking about extremely large marshmallows.
When I found these, I knew I had to make some delicious type of recipe with them so I am introducing you to Marshmallow Rainbow Pops.
Rosie is a huge fan of marshmallows but Luna isn’t. It’s so funny how similar yet different those two can be.

WHAT ARE MARSHMALLOW RAINBOW POPS?
Take a large fluffy marshmallow, some melted chocolate, sprinkles, and put it all on a stick.
There ya have it! Probably the easiest dessert to make.
If your kid loves marshmallows, chocolate, and sprinkles, then this recipe is a no-brainer… you just have to make it for them.
You can even spice it up by dipping the whole marshmallow into chocolate because in my mind, the more chocolate, the better.
WHAT YOU NEED TO MAKE THEM WITH
The only things you will need are some festive straws like the ones Pink Chocolate-Dipped Wafers, here, and here.
Want to make them for St. Patrick’s Day? These straws would be so cute!
Another alternative is using regular cake pop sticks that you can get here.
You’ll also need a baking pan and wax paper so the melted chocolate doesn’t stick to the pan!
WHAT INGREDIENTS YOU WILL NEED
First, you need those ridiculously large campfire marshmallows.
Then, make sure you have both white chocolate and green chocolate melts.
Lastly, get some awesome rainbow sprinkles or yummy Lucky Charms marshmallows as toppings.
Chocolate shavings and even crushed peanuts or pecans would also be delicious as a topping.

Keep in mind, because St. Patrick’s Day is around the corner, I wanted to use green chocolate melts but if you wanted to do this for a different holiday, change up the chocolate melts!
Pink and red would be cute for Valentine’s Day.
Red and green are perfect for Christmas.
Rainbow colors would be fun for a birthday!
The options are endless.
HOW TO MAKE MARSHMALLOW RAINBOW POPS
First, line your baking pan with wax paper.
Then, get your marshmallows out of the bag and set them on the wax paper.
Cut your paper straws in half (if using cake pop sticks you can skip this step).
Melt the white chocolate according to directions and dip the straws (cut end) into the white chocolate and stick into the middle of the marshmallow.
Set aside to let the white chocolate harden.
While the white chocolate is hardening, melt the green chocolate melts according to directions.
Once the white chocolate is hard, take the marshmallow pop, and dip halfway into the melted green chocolate.
Try to let as much green chocolate come off the marshmallow as possible before adding sprinkles, Lucky Charm marshmallows, or any other toppings you desire.
Lastly, let that harden. Then, in about 10 minutes you can enjoy!

Marshmallow Rainbow Pops
Ingredients
- 1 bag campfire marshmallows or any big marshmallows
- 1 bag white chocolate melts
- 1 bag light green chocolate melts
- 1 handful sprinkles
- 1 handful Lucky Charms marshmallows crushed
Instructions

Set aside to let the white chocolate harden.

While you let the white chocolate harden, melt the green chocolate melts

Once the white chocolate hardens, dip the marshmallow into the light green chocolate melts and immediately add sprinkles, crushed Lucky Charms marshmallows or any other toppings you prefer

Allow the green chocolate to harden then enjoy!
