Savor every bite with this protein-packed pumpkin mug cake… delicious and healthy all in one!
Over the last two months I have really been focusing on adding more protein into my nutrition plan and it has paid off for sure.
I’ve lost 8lbs!
Protein powder makes it so easy to incorporate into my daily meals.

I use protein powder in my pancakes, smoothies, yogurt, ice cream, mug cakes, muffins, and more!
What Kind of Protein Powder Should You Use?
My favorite protein powder brand is Clean and Simple Eats.
I’ve been using this brand for over a year now and just love the flavor.
No chalky taste, no weird texture, no strange aftertaste, it’s just delicious!
I love it because the protein powder has 20g of protein, contains a digestive enzyme blend and is made up of natural ingredients.

They have tons of different flavors and even have sample flavors if you are not sure which one to try first.
If it were up to me, I recommend trying Simply Vanilla or Brownie Batter first (basically a vanilla and chocolate flavor).

Then try out ones like Snickerdoodle (my personal favorite), chocolate peanut butter, or a fun one like Cake Batter or Banana Foster.
Ingredients to Make Pumpkin Mug Cake
For this recipe, the exact measurements are listed in the recipe card below.
The ingredients are as follows…
First, you will need cottage cheese.
I prefer Good Culture cottage cheese because they are certified USDA Organic. They don’t contain any gums, thickeners or carrageenan like some others do.

Next you will need pure pumpkin (not pumpkin pie filling).
I typically get mine from Trader Joes.
You will also need vanilla protein powder and as I’ve mentioned earlier, I use Clean and Simple Eats.
Lastly you will need an egg and pumpkin pie spice.
How to Make a Pumpkin Mug Cake
First blend all ingredients together and pour into a microwave-safe bowl or mug.
Microwave for about 2 minutes (keep an eye on it).

Take it out and enjoy!
*Please note that the outer layer will be set but the inside will be quite gooey. That’s how it should be, trust me… it’s delicious! If you overcook it it won’t taste as good.
