This post is all about vanilla wafer pencil cookies!
This is the first year I am sending one of my kids to elementary school and this mama has all the feels.
Just yesterday, Rosie went off to kindergarten, and yup… I absolutely cried.
When people say, “time flies” they are so right. I mean, it feels like just yesterday when Rosie was born.
Now that we’re done with the back-to-school shopping, orientation, and getting her on the school bus… it’s time to chat about these back-to-school treats… pencil cookies.
In celebration of Rosie heading off to kindergarten (or if any of your kids are going to school this year), I thought it was most appropriate to create a cute back-to-school treat… or in her case, a starting school treat!
These pencil cookies might be the easiest treats you could make.
WHAT YOU NEED TO MAKE THEM WITH
It’s pretty simple actually.
All you’ll need is a baking sheet with wax paper on it and two bowls for melting chocolate.
WHAT ARE THE INGREDIENTS?
First, you’ll need wafer cookies and as I mentioned, I did vanilla ones to match the look of a pencil.
Now, you could opt to do lemon, strawberry, chocolate, etc…

Then you’ll need white chocolate melts and pink chocolate melts.
The white chocolate goes on the top of the pencil and the pink chocolate goes on the bottom like an eraser.
Lastly, you’ll need sprinkles.
I used a small black ball as the “lead” of the pencil and cute rainbow sprinkles as a fun twist on some of the pencil erasers.
HOW TO MAKE PENCIL COOKIES
First, melt the white chocolate according to directions.
Then, you take the wafer cookies and cut off the corners on the top of the cookie to make it into a triangle, or “pencil-like.”
Be sure to eat the corners because you can’t let those go to waste!
Next, dip that portion into the melted white chocolate to create the top of the pencil.
Add the black sprinkle and let the chocolate harden.
While the chocolate is hardening, melt the pink chocolate according to directions.
When the white chocolate has hardened, dip the end of the pencil into the pink melted chocolate to create the eraser.
Add some extra sprinkles if you wish and let that harden.
