You guys, I think I just invented the best breakfast ever!
Well… I am 99% sure it’s been done before but I woke up one morning thinking about how I can make my kids a fun (and healthy) breakfast that they’ve never had before and pancake donuts came to mind.
Although that doesn’t sound healthy, we actually used Kodiak Pancake mix as the main ingredient and added a few more protein sources to make it higher in protein and super delicious as well.

What Pancake Mix Should You Use
This part is entirely up to you but I am quite picky about my pancake mix.
I use Kodiak Power Cakes for my pancake mix.
Typically we go for the Chocolate Chip flavor or Buttermilk and for this recipe we used Chocolate Chip because that is my kid’s favorite.

Another option would be to make your own homemade pancake mix.
I don’t have a good recipe for that but Kristine’s Kitchen and Culinary Hill have some great options.
Ingredients for this Pancake Donut Recipe
As mentioned, we used Chocolate Chip Kodiak Power Cakes. They also have buttermilk, birthday cake, dark chocolate, pumpkin spice, blueberry, and more.
So you can really play around with the flavors!
Pancake Mix Add-Ins:
With the Kodiak Power cakes mix you can add in eggs and substitute water for milk.
I opted to add in 1 egg and use Fairlife 2% Milk because of the higher protein content.

Toppings:
Lastly, if you really want to make these fun for the kids, add in some sprinkles or even more chocolate chips on top!
How to Make Homemade Pancake Donuts
Preheat oven to 375 degrees and spray a silicone donut mold with nonstick spray and set aside.
Mix the pancake batter according to the box’s instructions (I did 1 c. Kodiak Power Cakes, 1 egg, and 3/4 c. Fairlife 2% milk).

Spoon batter into the donut pan about 3/4 full and add sprinkles on top of each donut (or whatever topping you plan on using).
Bake for about 8-12 minutes until springy but cooked through.
Remove from oven and let it cool for a few minutes then enjoy!
Topping Ideas for Pancake Donuts
Syrup or Honey Drizzle: Keep it simple and sweet with a drizzle of maple syrup or honey.
Powdered Sugar Dusting: Add a light sprinkle for a touch of sweetness.
