Pancake donuts are not only delicious but also a great way to get the whole family involved in the kitchen.
So, ditch the ordinary breakfast for a day and bring some fun to the table!
What is the Best Pancake Mix to Use?
You have a few options for pancake mix.
You can either make your own homemade pancake mix or you can go the route I did and buy a mix.
I like to always have pancake mix on hand so I used one I already had.

Now, the kind of pancake mix makes a difference to me,
My family and I prefer to use Kodiak Power Cakes for my pancake mix and in most of my recipes, we use the Chocolate Chip flavor because my girls like that one the most.
Where to Get the Silicone Donut Mold
If you’re wondering where to get the silicone donut mold for this recipe, we grabbed ours right off Amazon!

There are tons of great options on there and many come in sets with multiple colors or sizes.
The reason I like to use silicone donut molds is because they are so easy to clean and the donuts pop out super smoothly every time!
Ingredients for this Easter Pancake Donuts Recipe
Pancake Mix:
As mentioned, we used Chocolate Chip Kodiak Power Cakes.
Keep in mind they also have other flavors such as buttermilk, birthday cake, dark chocolate, pumpkin spice, blueberry, and more.
So you can pick and choose which flavor you would like.
Pancake Mix Add-Ins:
With the Kodiak Power cakes mix it calls water.
However, you can substitute water for milk so we use Fairlife 2% milk because it contains a high amout of protein.
You can also add in an egg (also extra protein) so we opt into that too.
That’s all the ingredients you will need for this simple Easter brunch recipe!
Easter Sprinkles
For this recipe, I used two kinds of Easter sprinkles.
One was the little pastel nonpareils that I put both inside the mix and on top of the donut.
The other kind were those cute Easter bunny and carrot sprinkles, perfect for decorating on top of the pancake donuts!

How to Make Homemade Pancake Donuts for Easter
Preheat oven to 375 degrees, spray a silicone donut mold with nonstick spray, and set aside.
Next, you will mix the pancake batter according to the box’s instructions (I did 1 c. Kodiak Power Cakes, 1 egg, and 3/4 c. Fairlife 2% milk).

Add the nonpareils into the mix and stir to combine.
Take your silicone mold and spoon batter into the donut pan about 3/4 full. and add more nonpareils to the top.
Then add some cute Easter sprinkles as well.

If you are not a big sprinkle fan, I’ve listed tons of other topping ideas down below.
Bake for about 8-12 minutes until springy but cooked through.
Remove from oven and let it cool for a few minutes then enjoy!
