They are practically nostalgic!

I loved eating them but wasn’t a fan of making them.

Truth be told, I hated the stickiness and the mess.
It just seemed like those little melted marshmallows would get on everything!
So when I was feeling like it was time to make some rice krispies again I thought, let’s try something new.
These healthy peanut butter Halloween rice krispies are delicious and since we are creeping up on Halloween, I decided to make these just a tad spooky.

Ingredients to Make Chocolate Peanut Butter Rice Krispies
This deliciously spooky recipe contains seven ingredients.
Peanut Butter –
Try to get a more runny peanut butter with enough oil for the ingredients to stick together.
If you’re not a fan of peanut butter you can substitute it for almond butter, cashew butter, sunflower butter, or whatever nut/seed butter you like.
Maple Syrup –
Typically I get my maple syrup from Trader Joe’s.
My favorite brand is Trader Joe’s Vermont Organic Maple Syrup but feel free to get whatever kind you want.
Not a fan of maple syrup?
You can substitute it for honey.

Cereal –
The cereal I chose was One Degree Sprouted Cereal Brown Rice Cacao Crisps.
This is way healthier than the standard Rice Krispie cereal.
Sprouted Brown Rice Cacao Crisps is a gluten-free cereal containing low-glycemic coconut palm sugar and great vitamins and minerals.

Chocolate –
My go-to chocolate is from Enjoy Life.
It is dairy-free and they are known for prioritizing the health and happiness of their customers by creating items that are free from the top 14 common allergens.
This chocolate also tastes delicious.
You will also need coconut oil, vanilla extract, and sea salt.
How to Make Healthy Chocolate Rice Krispie Treats
First, grab a medium-sized mixing bowl and combine peanut butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt.


Stir the ingredients until smooth and well combined, creating a rich, creamy base for the treats.
Next, gently fold in the brown rice cacao crisps, making sure to coat them evenly with the peanut butter mixture.
Be careful not to crush the crisps as you mix to keep them light and crunchy.



Grab your silicone mold of choice (I used a fun Halloween shape!), and press the mixture firmly into each mold cavity, leaving a small space at the top for the chocolate layer later on.
I found my silicone molds at a local store, but you can easily find adorable options on Amazon.
Once the mixture is firmly pressed, place the mold in the freezer for about 30 minutes to allow it to set.


While you wait, melt your favorite chocolate in a separate bowl using either a microwave or a double boiler.
Remove the peanut butter crisps from the molds and set them aside briefly.

Now, pour a layer of melted chocolate into the bottom of each mold, enough to cover the base. Carefully place the rice crispies back into the mold on top of the chocolate.
Finally, place the mold back into the freezer until the chocolate hardens, about 15-20 minutes.


Once set, pop them out of the molds and enjoy these delicious, crunchy, peanut butter chocolate treats!
Why I Love these Halloween Rice Krispies
These Halloween Rice Krispies have quickly become one of my favorite treats.
First, they strike the perfect balance between being super delicious without sacrificing how healthy they are (considering they are a dessert).
Using simple, wholesome ingredients like peanut butter, maple syrup, and brown rice crisps, these treats are a healthier alternative to traditional sugar-loaded snacks.

I love that they still have the classic crunch and sweetness you expect from a Rice Krispie treat, but without all the processed ingredients.
The addition of chocolate makes them feel extra special, adding a rich layer of flavor that pairs perfectly with the peanut butter base.
Because if you don’t know by now… I am a huge chocolate lover.
Not only do they taste amazing, but they also come together quickly, which is perfect when busy prepping for Halloween parties and outings.
Using silicone molds allows you to get creative with fun Halloween shapes, which is always a hit with the kids.
Another reason I love these treats is that they’re easy to customize.
You can sprinkle them with festive toppings like orange and black sprinkles or add a bit of sea salt for an extra flavor boost.

Mix peanut butter, maple syrup, coconut oil, vanilla extract, and sea salt in a bowl.

Add in the brown rice cacao crips and mix carefully until fully coated.

Grab your silicone mold and press the mix into each mold but make sure to leave a little bit of room at the top.

Place in the freezer for 30 minutes.

Take it out of the freezer and in a separate bowl, melt the chocolate.

Take out the rice krispies from their molds and set aside.

Add melted chocolate to the bottom of each silicone mold and then place the rice krispies back into their molds.

Place in the freezer until the chocolate hardens.
