Fathers Day is two days away!
Since my dad is a HUGE fan of anything with blueberries and we are doing a surprise brunch for him tomorrow, I figured a blueberry galette is the way to go! If you’ve never had one, you must try it! You can make them sweet by doing fruit such as apples, blueberries, peaches, and strawberries… or savory by using squash, tomatoes, onion, artichoke, cheese, etc.
Don’t forget to add a scoop of vanilla ice cream to the top of this before serving.

Blueberry Galette
Ingredients
- 2 pie crusts refrigerated
- 3 cups fresh blueberries
- 1/3 cup sugar for blueberries
- 1 tsp sugar for crust
- 2 tsp corn starch
- 1 lemon juiced
- 1 tsp lemon zest
- 1 tsp cinnamon
- 1 egg whisked
- vanilla ice cream
Instructions

Preheat the oven to 400 degrees.

Roll out the pre-made pie crusts onto two separate greased pan.

In a bowl combine blueberries, lemon juice, lemon zest, corn starch, sugar and cinnamon.

Split the filling into two and spoon the blueberry filling to center of each pie crust. Be sure to leave 2″ around the perimeter for folding.

Fold the crust like a fan around the perimeter, press to seal the crust at the corners.

Brush perimeter with egg wash and sprinkle with 1 tsp. sugar.

Bake for 20 minutes, or until crust is crispy and golden brown.

Add scoop of vanilla ice cream on top of each before serving!
