While I am sitting here jamming out to Christmas music and writing out this blog post, I just realized that Christmas is less than ONE WEEK AWAY.
What does this mean exactly?
Time to whip up some Christmas cookies for Santa of course!
Now, I have two simple requirements for making cookies.
The first is that it must be a quick and easy recipe (the less ingredients the better) and the second is that the cookies must be delicious (because DUH).
So, here is an amazing recipe (if I may say so myself) that I decided to call “Christmas Cookie Cups.”
I think mini muffin tins are the cutest thing and love to bake with them. They are the perfect size for my little toddlers too. I chose to use chocolate chip cookie dough but you can make these with any type of cookie.
I used a total of 5 ingredients and three of them were toppings.
A perfect Christmas cookie if you ask me.
Just look at that melted chocolate… brb drooling.

This is also definitely “husband approved” as my hubby was my official taste tester.

Picking the toppings was my favorite part.
I have crushed peppermint candies, peppermint Hersey’s kisses and Christmas sprinkles.
You can add other toppings such as super itty bitty mini marshmallows, chopped peanuts or coconut flakes.
YUMMY!
These cookies pair very well with some Frozen Hot Chocolate. Such a perfect treat for a Christmas Eve night before Santa comes.
Just be sure to leave him a few cookies, a glass of milk and a carrot or two for the reindeer!

Ingredients

- Pre-heat oven to 350 degrees.
- Break apart each pre-cut cookie and press into the tin.
- Cook the chocolate chip cookie dough as directed on the Nestle TOLL HOUSE package.
- When done, remove from oven and immediately make a dent in the middle of each cookie to make a cup.
- While letting the cookies cool, melt down the Nestlé TOLL HOUSE Semi-Sweet Chocolate Morsels as directed on the package. Be careful not to burn the chocolate. ICK!
- When completely melted, place the chocolate into a Ziploc bag and cut off a corner piece of the bag.
- Fill each cookie cup with the delicious melted chocolate and top it off with sprinkles, hershey kisses or peppermint candies.
