When Rosie first tried avocado she hated it. That broke my heart since avocados are on the top of my favorite foods list.
Now, she is finally learning to like it although we think she just likes to say the word avocado… not really eating it.
Truth be told… I am kind of obsessed with avocados.
Not only is it creamy, delicious and super good for you but according to Medical News Today, avocado “is the only fruit that provides a substantial amount of healthy monounsaturated fatty acids (MUFA). Avocados are a naturally nutrient-dense food and contain nearly 20 vitamins and minerals.”
YES! Give me all the avocados!
I have come to realize that avocado toast is quite a popular recipe to talk about (check out Instagram… #avocadotoast has been mentioned over 1.3 million times). However, I can’t help how good it tastes. Is it the soft, creamy avocado paired with the crunchy and savory Ezekiel toast?
Who knows?!
Why do we use Ezekiel bread? Because there are SO MANY BENEFITS! However, any bread will do.
After a long day of work sometimes making snacks for my kids is such a daunting task… why can’t I just give them a bag of potato chips and call it a day?
Well… not to say I haven’t done that before (no judgment here) most of the time I would rather feed my kids nutrient-dense foods that they enjoy.
That brings me to my avocado toast recipe…
Avocado Toast in Five Steps:
- Toast the bread
- Slice the avocado
- Add appropriate toppings (I added Himalayan salt, chia seeds and red pepper flakes)
- Drizzle with EVOO
- Add a spring of basil for looks (then rip up and sprinkle on toast)
